Over the past 5 weeks I have been going to Small Business workshops to figure out how to open this bakery. I learned so much and even gained a few contacts. It was incredibly helpful! For the last class I decided to make some bread for the everybody. Because it was last minute and I didn’t have any pre-fermented dough handy, I decided to make baguettes and add some cracked wheat for flavor.

The dough always starts out looking pretty gnarly, but after kneading and resting it it turns into this …

The small bumps are the cracked wheat. Next it’s time for dividing and pre-shaping . .

Everyone seemed to like them, they went pretty fast!

So much going on. God is doing amazing things! We are in constant preparation for our missions trip to Malawi, Africa. Our missions group met a few weeks ago and I made a couple things for them using my croissant dough recipe. I also wanted to work on a homemade burnt caramel sauce. It worked out well.

In business news, things are picking up! I have a few new clients as well as a couple new breads that I’m working on. I have a 100% sprouted wheat bread that is on point. I’m also linking up with the Wharton school of UPenn. They help entrepreneurs get their businesses off the ground. I also took my Serve-safe exam last week. Passing this exam will give me a license needed to legally sell food products anywhere in Philadelphia. I should get the results back next week.

It’s crazy how much bread and leaven is talked about in the bible. I mean Jesus even uses bread as a symbol for his body broken for us! I need to do some serious studying about bread throughout the bible.

Here are a couple new items on the Wadsworth Breads menu. on the left is the 5-grain seeded bread. It has Oats, Bulgar (cracked wheat), sunflower seeds, flax seeds, and wheat flour. On the left is french style croissants. These aren’t the Pillsbury crescent rolls you see in the store. These are made by having about 27 layers of butter and dough rolled thin and formed into a crescent shape. It takes time but it’s really worth it. It gives the bread a very flaky, light, buttery interior with a crispy crust.
